I took the rest of this cake in to work to share with my colleagues and the reaction was similar to the band – lots of love for the interesting cardamom flavours, one colleague thought there was a hint of parma violets going on but I’m not sure about that one…either way it’s long gone now!

Holy sweet mother of tasty! This is probably the best non-chocolate cake I’ve ever tasted! Really, really strong but very sumptuous natural flavours. In summary: OM NOM NOM NOM NOM!!! The band certainly enjoyed it! It’s been in their vicinity for about 2 hours and it’s half gone!

Amelia has an awesome recipe for ‘Grantham Gingerbreads’ – maybe you could investigate that? All the pictures online look like little shortbreads, but I’m sure hers was flatter and smoother (and tasted incredible). I can ask her if you like?
